Freska Restaurant – Sooo Pinoy Food Tour in Iloilo

I’m currently here in Iloilo for the Sooo Pinoy Food Trip na Pilipinas Tour together with friends from Print Media and TV. As one of the most favorite destinations of Pinoy Gourmet Nomads, Iloilo was chosen by Unilever as the first stop for the nationwide food tour.

Chicken Binakol Iloilo Style

Our first stop was in Freska Restaurant. Freska is the biggest and foremost authentic Ilonggo restaurant that serves fresh, delicious and authentic Ilonggo dishes.

Kadios Baboy at Langka

The first dish they served was their version of Chicken Binakol. With a generous mix of young coconut meat and native chicken, this soup is truly a must try. I love the mild sweetness of the broth and the hint of ginger that compliments well with the taste of native chicken. Unlike other versions of Binakol, Iloilo’s version has potato in it, quite surprising but in good way… In fact Im gonna try their recipe at home:)

Pinamalhan na Pink Salmon Fillet

Kadios, Baboy at Langka is popular local dish. Its mainly composed of Kadios – the black beans which has a distinctly purple color when cooked, tender pork (pigs feet or Pata) and Mangka (the local term for langka). In Iloilo, soups are also served as a main dish much like every soup recipes that we enjoy in Luzon.

Guimaras Mango with Italian Gelato

Pinamalhan na Pink Salmon Fillet is their version of pinaksiw but instead of using the usual fish we enjoy for paksiw, they used Pink Salmon to make it more delightful. It was served with sliced green Mango and tomatoes gourmet style. The dish has right amount of salt and a bit sweet and sour but the vinegar is not overwhelming.

Along with the main dishes, they served brown rice which is organically produced by Jamandre Farm in Iloilo. For dessert, they served Guimaras Mango with Italian Gelato… needless to say… Its an amazing dessert. By the way, I love their dalandan juice, its a bit sweet but its totally refreshing.
