Fiji Restaurant at Plantation Bay Resort and Spa Mactan : Sooo Pinoy Food Trip na Pilipinas!

April 11, 2012 – Sooo Pinoy Food Tour Day 1 in Cebu – Previous Post : Tides Restaurant at Shangri-la Mactan.

After our wonderful La-uya experience at Tides Restaurant in Shangri-La Mactan, we moved to Fiji Restaurant at Plantation Bay Resort & Spa also in Mactan. One of the four restaurants in the resort, Fiji offers a wide variety of Pacific Rim Cuisine from sushi and sashimi to some of Asia’s famous cuisines including our very own Filipino Dishes. Located beside the beach at Plantation Bay Resort and Spa, Fiji offers an alfresco and air-conditioned dining with a unique and casual tropical atmosphere.

Kissing Cousins

The restaurants interior is very impressive with its vaulted ceilings, bamboo accents and furnitures mostly made from wood, the ambiance is truly so relaxing. Fiji also has Filipino Fiesta every Wednesday for clients who loves eating our very own mouth watering dishes. Chef Henry Abellana, the Executive Sous Chef of Fiji prepared two delectable dishes for us which they named Kissing Cousins and Spaghetti Al Negro.

Spaghetti Al Nero

Kissing Cousins stands out as an appetizer menu. I never imagined that prawns and lobsters chunks can be paired and turned into a perfect crustacean appetizer. Their prawns and lobsters are locally sourced which makes the dish truly filipino. Sauteed in garlic and white wine, this dish will totally please your palate and make you ask for more.

Alfresco Dining at Fiji Restaurant

Spaghetti Al Nero is a pasta that has an outstanding black squid ink flavor. The Chef uses home made pastas that is flavored with black squid ink so you can keep smiling while eating and you can stop worrying about black ink stains in your teeth. The pasta is sauteed with onions, white wine, scallops, mussels, squid and garnished with basil, pepperoncino and other seasonings.
